So remember how I was really stressed before spring break with midterms and I said that everything should be better afterwards? I lied. It actually got worse. You win some, you lose some.
I have been trying to juggle three group projects with my regular school work, which I am a little behind on. In addition, I have been working on several big stories for AU's Student Government elections with The Eagle. You should check the big ones out here and here, and you should just read the whole Eagle website because everyone does such a terrific job! It's so much fun to work with people who are just as invested as you are, and it helps that they're great to be around too! #DreamTeam :D
Over the past week and a half, while I have been staying up until 2 a.m. to get work done, I have also been having major 90's kid nostalgia. Does anyone out there remember this?
I don't think I have actually seen the music video until now, which is probably good, but I was a Britney fan way back when! So imagine me, at 1 a.m., jamming out to ridiculous 90's tunes like "...Baby One More Time" while I'm reading about Martin Luther and the Reformation, and you'll understand how I have managed to remain sane. Plus, since I haven't been able to get back on my exercise routine like I wanted to this week, impromtu dance parties have helped me stay moving and relieve some stress. Never take yourself too seriously! :P
Whether you agree with everything Britney has done or not, I give her props for making a major comeback. Hopefully you know that mental health issues are no joke, and I think it's inspiring that even though she hit rock bottom, she has been able to find a way to get better, no doubt with the support of her family. Our health is the most important thing we have, and it enables us to care for the people we love and do the things we love. Never be afraid to ask for help, and trust your intuition if something doesn't feel right!
I prepared the recipe for this post over spring break, thankfully, so I had something on hand for weeks like this one. They're pretty simple and sweet, which sounds right for the start of spring, doesn't it? You can also make use of some pears as they go out of season too! I used this little loaf pan we have at home to make these, but the recipe would work just as well in a muffin tin, larger loaf pan, or even a doughnut pan if you have one! That might affect the cook time, but you should try to pay attention to the oven while baking anyway because every oven is different.
Mini Ginger Pear Muffin Cakes
Adapted from this recipe from Taste of Home
Prep Time: 20 minutes
Cook Time: 20-25 minutes
oil or oil spray to grease the pan
1 tbsp. ground flax seeds combined with 3 tbsp. water (flax egg)
1 c. lightly sweetened almond milk
Juice of 2 lemons
1/4 c. and 1 tbsp. coconut sugar
1/4 c. melted coconut oil
1 tbsp. fresh ginger, grated
1.75 c. brown rice flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground cinnamon
1 pear, chopped
- Make the flax egg, and set it aside to allow the water to be absorbed and the mixture thicken.
- Meanwhile, make some vegan buttermilk! Combine the almond milk and the lemon juice. Stir the mixture a little bit, and then set this aside too.
- Combine the coconut sugar, coconut oil, and ginger in a large bowl. Combine the flour, baking soda, salt, and cinnamon in a medium bowl, and slowly pour the mixture into the liquid ingredients, stirring as you go. Be sure not to over-mix.
- Gently fold in the pear. Grease your pan and scoop the batter in.
- Cook for 20-25 minutes, depending on what pan you use and your oven's temperament. Let the little loaves cool for 10 minutes before removing them. Store them in the fridge or freezer if you won't be eating all of them right away. (You might want to!)
I also had to throw this in because whoa 90's. I was too young to remember much of the time before our current constantly-plugged-in way of life, but I can still appreciate the advances of the last 15 years. Also, boy bands have changed so much! One Direction has nothing on N'Sync. Such synchronized dancing. Much outstanding hair. 90's I want you back! :P
